Variety rice fills most of us lunch box, because it is easy to eat. In that list Tomato Rice comes first. Amma will prepare morning leftover white rice as Tomato Rice for dinner.My Attai also do the same. Since i wont eat non veg, mostly Tomato Rice will be my Sunday lunch (or any variety rice). Hence it is easy to prepare i did it last Sunday.

Tomato Rice recipe Ingredients:
Cooked Rice : 1 cup
Tomato : 2 no's (roughly chopped)
Big Onion : 1 no (chopped slice)
Green Chillies : 3 no's (chopped vertically)
Curry Leaves : Few
Turmeric Powder : 1 tsp
Oil : As required
Mustard Seeds : 1 tsp
Salt : To taste
Method :
1.Keep the Ingredients ready. In a kadai (pan) heat oil and add mustard seeds let it splutter then add chopped big onion and fry it.
2.Once the raw smell leaves add green chillies fry for a min then add curry leaves, tomato and turmeric powder.
3.Cook well for 4 - 5 min in medium flame. Then add cooked rice.
4.Give a stir add salt and mix it well.
Your Tomato Rice is ready to eat..
Serve hot with curd and lemon pickle.
Notes :
Cook the rice carefully it should not be sticky.
Mix the rice well at final step.
You can also add ginger garlic paste while frying onion's.
You can also add salt before adding rice. But by that time you can't able to judge the taste correctly so it advised to add after adding white rice.
